What's for dinner?

:: Salmon and Pesto Pasta ::

And to answer your question,

yes...

my kids will eat it.

both of them.

In fact, they ate lots of it tonight.

Especially this guy, cause he likes to eat...

He's pretty much the president of the Clean Plate Club.

I've worked hard to NOT have picky eaters, so I love that I can make just about anything and they'll eat it. Makes it easy to cook for the whole family.

Anyhow, want the recipe?

It's super easy and delicious.

SALMON AND PESTO PASTA

Ingredients:
  • 1 pkg penne pasta
  • 1 to 2 lbs salmon fillet
  • some sort of seasoning for salmon (I use this, or you could use lemon pepper, etc.)
  • 1 cup (or so) pre-made basil pesto (I use Buitoni)
  • 1/2 of a yellow onion, finely chopped
  • 3 green onion, thinly sliced
  • chopped broccoli
  • 1 cup shredded parmesan
  • squeeze of lemon (optional)
Directions:

Preheat oven to 350. Season salmon, and place in glass baking dish. Bake 30 minutes or until fish flakes easily. Flake into chunks. Meanwhile, cook pasta according to package directions. Saute onions and broccoli in olive oil until golden brown/heated through. (you can also add other vegetables if you want such as mushrooms, cherry tomotoes, asparagus tips, etc.) In large bowl, combine pasta with basil pesto. Toss in vegetables, salmon and parmesan. Serve with a squirt of lemon and crusty bread if you have it!

I LOVE all of your recipes. We are going to start having them on a regular basis. When the girls eat, they will eat anything put in front of them. The only problem I have is getting them to eat more than two bites for dinner. I am amazed that your boys will eat the portions you had on their plates. My girls would eat about a quarter of that. Hence the reason that they are underweight.
