Moroccan Chicken

It's been way too long since I posted a recipe, don't ya think?

This is the most recent meal my family has been LOVING.  Big thanks to my mom for giving me the recipe.  She's such a good cook.  :)

This is Moroccan Chicken.  It's got just the right amount of "kick" without being too spicy.  Even my kids will eat it, but if your kids aren't into any kind of spice, you can still give them the inside part without the flavoring on it.  Here's the recipe my friends:

:: MOROCCAN CHICKEN ::

Ingredients:
  • 6 - 8 chicken thighs (If you can find the boneless, skinless ones, get those!  I've used the ones with the skin and bone because they're super cheap at Costco.  I trim off the skin/fat, and then it takes a bit longer to cook on the grill with the bone.)
  • 2 Tablespoons garlic chili sauce (see photo below)
  • 1 1/2 teaspoon cumin
  • 1 teaspoon coriander
  • 5 - 6 Tablespoons olive oil
Mix marinade ingredients in bowl, whisk.  Marinade will be thick.  Put chicken thighs in ziploc bag, pour marinade over.  Be sure to coat each chicken piece well.  Marinade in refrigerator for at least 2 hours.  Grill on low about 30 min. (with bone...less if without bone)

This is the garlic chili sauce I speak of.  You can find it in the asian section near the soy sauce and stuff...

I've been serving it with toasted pine nut cous-cous.  I toss some peas in there too 'cause they're yummy.

Add some fruit and call it a meal!  Let me know if you try it.  I think you'll like it!
